venessa’s orange cake recipe
1 orange 200g melted butter
3 lightly beaten eggs 1 1/2 cups self raising flour
1 cup castor sugar
1 lemon juiced & zest 1 orange juiced & zest
Preheat oven to 180’C. Grease & line 20cm cake pan
Wash and dry orange then BLITZ in food processor.
Add flour, sugar, butter & eggs.
Mix with a spoon - DO NOT over mix.
Cook for 35 - 60 min in oven until skewer comes clean.
While in pan, pour lemon & orange juice & zest over cake
Variations
* Add 200g roughly chopped dark chocolate to cake mix.
When cooled, ice with melted dark chocolate mixed with cream.
* Cook cake in a 12 muffin tin. Grease tin. Cook for 20 - 25 min.
* Instead of pouring juice and zest over cake, use apricot jam
