summer vege salad recipe

 

2 fresh corn cobs

3 bunches asparagus

4 baby zucchini

200g sugar peas

 

You can either blanch the veges or steam them. Both work!

Blanching & Steaming

Heat a pot of water/steamer to boiling, add the veges (unchopped) for the below times or until they change to a deep green. Do not over cook!

Remove from boiling water and emerse in cold water to stop them cooking.

  • Corn           3 min
  • Zucchini      2 min
  • Asparagus   1 min
  • Sugar Peas  1 min

Once cooled, cut corn off cobs in chunks, slice zucchini thickly, chop asparagus in half, chop ends off sugar peas.

Toss through with Mint and Lemon Dressing

 

Hints

The above recipe makes a LOT of salad.

If asparagus isn’t a good price then only buy one bunch.

You can peel the sugar peas and serve them without the pods.

It is better to uncook than overcook. If your veges have lost their lovely deep green colour then you have cooked them too much.
