perfect pikelets
1 cup self raising flour
3 tablespoons sugar
pinch of salt
1/4 teaspoon bicarb soda
1 egg
1 cup of milk (with a splash of lemon juice to sour it)
Butter to cook with
Mix all ingredients (except butter) in a bowl with a wooden spoon.
Heat 1 teaspoon (or dollop) of butter over medium heat in a non-stick frying pan.
Using a dessert spoon, place mixture in pan, (one spoon = one pikelet)
Flip your pikelets only when there are bubbles.
Heat more butter for every batch.
Hints
Don’t be tempted to put more mixture per pikelet.
They cook the best in real butter.
