lemon and mint dressing

 

1/4 cup torn mint leaves

2 spring onions

2 cloves garlic

2 tablespoons grated lemon rind

1/4 cup olive oil

2 tablespoons lemon juice

2 tablespoons white vinegar

 

Mortor and pestle the mint, garlic, onion and lemon rind

Add the remaining ingredients, salt and pepper to taste

 

Hints

This recipe works without the garlic

You can alter any of the ingredients to taste except the olive oil, too much will make the dressing too oily

This dressing is too chunky to use in a glass dressing bottle - better to put it in a nice bowl with a spoon if you want your dressing on the side

You really need to use fresh ingredients and decent olive oil
